A small portion of Viognier (3%) was co-fermented with the Shiraz to enhance complexity, contribute delicate floral aromatics, and deepen colour. The grapes underwent a slow, three-week fermentation to dryness before being gently pressed in a traditional basket press. Following fermentation, the wine completed malolactic conversion and was then matured for 20 months in French oak — 30% new and the balance seasoned (2–5 years old). The resulting wine is a soft, medium-bodied Shiraz with plush tannins, impressive length, and generous layers of flavour.
Shiraz was the second variety planted at Mt Pilot Estate, established in 1995. The vines were grafted onto two rootstocks — Paulsen and Ruggeri — chosen primarily for their resistance to Phylloxera. These rootstocks ultimately proved invaluable, helping the vineyard endure the severe drought between 2005 and 2009.
The Shiraz clone is believed to originate from an 1880 selection, renowned for producing consistently high-quality fruit at naturally low yields. Remarkably, these vines have survived up to five years without irrigation, even through some of the hottest summers on record.
In 2023, the vineyard produced approximately 2 tonnes per hectare. The vines are spur-pruned, with canopy management designed to balance exposure and protection — the western side left to sprawl for shade against the afternoon sun, while the eastern side is lifted on wires to welcome the gentle morning light.
The 2023 vintage in Eldorado was a year of patience, precision, and subtle reward. After a gentle spring, which encouraged steady budburst and even flowering, the vines enjoyed a long, moderate summer that allowed fruit to develop slowly and gracefully. Temperatures were generally mild, avoiding the extremes that can stress vines, while timely rainfall replenished the soil without compromising fruit quality.
This careful balance of warmth and water created grapes with exceptional flavour concentration, vibrant natural acidity, and expressive aromatics. Whites show lifted floral and citrus notes with a crisp, refined texture, while reds reveal elegance, depth, and plush, well-integrated tannins.
The vintage highlights the distinct character of Eldorado’s terroir: gentle slopes, poor soils, and a climate that rewards patience. 2023 promises wines that are approachable now but will also age gracefully, capturing the subtlety, balance, and finesse that Eldorado is renowned for.
